Kimchi Jjigae is a Korean classic! And our variation is easy, quick, and completely customizable! Whether you're a beginner or a seasoned cook, this savory stew can be made with a variety of proteins, veggies, and garnishes to suit your taste. Here’s how we make ours:
Ingredients:
4 cups kimchi
8-10 cups water
1/2 white onion, sliced
4 tablespoons K-Mama Mild Sauce
Protein of choice (Spam, tofu, pork, or mushrooms)
Rice (optional, for serving)
1. Start with 4 cups of kimchi and add it to a soup pot. (Pro tip: the type of kimchi you choose will affect the flavor! Check out our video for tips on picking the best one).
2. Fill the pot with 8-10 cups of water and turn on the stove. Let the kimchi and water get nice and hot together.
3. While it heats, slice 1/2 a white onion and add it to the pot. Cover and let it cook down.
4. After the onions have softened, add 4 tablespoons of K-Mama's Mild Sauce to the pot and stir it in. For more heat, you can add more sauce or go with our spicy flavor.
5. Cut your choice of protein. We use Spam because it’s a nostalgic part of Korean cooking that adds a salty, comforting flavor to the dish. Feel free to swap Spam for tofu, pork, or even mushrooms if you prefer a healthier option.
6. Let the protein cook in the stew. Since Spam is already cooked, it only takes about 15 minutes.
7. Serve in bowls with a side of rice for a more filling meal.
