Inspired by the New York Times Gochujang Caramel Cookie recipe, we’re turning up the heat with a K-Mama twist. Our Caramel K-Mama Cookies are the perfect marriage of sweet and savory, with a caramel undertone.

The gochujang in our K-Mama Sauce blends beautifully with the sweetness of caramel, creating a rich, unique flavor profile that’s perfect for cookie lovers looking for something a little different. Plus, they’re versatile! Make them vegan, gluten-free, or even festive with a few simple tweaks. 

Ready to bake? Here's how to create these one-of-a-kind cookies.

Ingredients: 


8 tbsp butter (or Earth balance for a vegan or non-dairy version)  

 2 tbsp light brown sugar 

1 heaping tbsp K-Mama Original Vegan Hot Sauce (Use GF for Gluten Free version)

1 cup sugar 

1 large egg (Swap the egg with 1 tbsp ground flaxseed + 3 tbsp water for vegan)

1 tsp vanilla extract 

1 1/2 cups all-purpose flour (or gluten-free flour for a GF option) 

1/2 tsp baking soda 

1/4 tsp ground cinnamon 3/4 tsp salt 


Instructions: 

Step 1: Make the Gochujang Caramel Paste 

In a small bowl, mix 1 tablespoon of butter, brown sugar, and K-Mama Sauce until you have a smooth caramel-like paste. Set aside. 

Step 2: Prepare the Dough In a mixing bowl, beat the remaining butter with sugar, egg, and vanilla until fluffy and creamy. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Chill the dough for 10-15 minutes. 

Step 3: Add the Caramel Swirls Remove the dough from the fridge. Add dollops of the caramel paste to the dough, using a spatula to gently swirl it in without fully mixing. The goal is to create a marbled look. 

Step 4: Bake the Cookies Preheat your oven to 350°F. Line two baking sheets with parchment paper or silicone mats. Use a large cookie scoop (about 3 tablespoons) to form cookies, placing them 2 inches apart. Bake for 11-13 minutes, or until golden brown with cracks on top. Rotate the pans halfway through baking for even results. 

Step 5: Make Them Festive (Optional) Want to dress these cookies up for the holidays? While they’re cooling, sprinkle sesame seeds or colorful sprinkles over the tops for a festive flair!
