Korean K-Mama Braised Eggs

K-Mama Braised Eggs side dish is based on Korean Soy Sauce Marinated Eggs, which is boiled eggs marinated in soy sauce and topped with sesame seeds, garlic and peppers. K-Mama Braised Eggs are a sweet and spicy remix of this classic banchan and are sure to be a delicious and easy-to-make addition to your favorite meal.


Ingredients 

  • 8 Eggs 
  •  7 Shishito Peppers (or substitute with sweet peppers) 
  •  Approx. 1 cup of water (enough to submerge eggs halfway while boiling)
  •  ½ Tbsp Salt 1 Tbsp White Vinegar 
  •  1 Tbsp Soy Sauce 
  •  4 Tbsp K-Mama Sauce (Hottest) 
  •  2 Tsp Honey 
  •  Rice (for serving) 
  • Optional Garnishes: Perilla Leaves, Scallions, Chili Flakes 

Directions 

1. Prepare the Soft-Boiled Eggs: In a pot, boil water with salt and vinegar. Add the eggs to the boiling water and cook for 7 minutes. Once done, remove the eggs from the pot and place them in cold water to cool. Carefully peel the eggshells off. 

2. Make the Sauce: Combine the following: 4 Tbsp K-Mama Sauce (Hottest) 1 Tbsp Soy Sauce, 2 Tsp Honey Stir the ingredients until the sauce is smooth and evenly mixed. 

3. Marinate the Eggs: Place the peeled eggs into the pan with the sauce. Stir the eggs gently to coat them evenly with the sauce. Cook over medium-low heat, stirring continuously to prevent burning and to ensure the eggs soak up the sauce. 

4. Add the Shishito or Sweet Peppers: Once the sauce has thickened, add the Shishito peppers (or sweet peppers). Let the peppers cook fully in the sauce. If needed, add 1 Tbsp of water to help cook the peppers. Stir in more K-Mama sauce for additional heat and flavor.

5. Serve and Enjoy Serve the K-Mama Braised Eggs on top of rice. Optional garnishes include perilla leaves, scallions, or chili flakes.

This recipe is a fusion of cultures between two friends, Ian and Marco. 

Ian grew up in Korea, watching his mom make Mayak Eggs, a beloved side dish in many Korean households. 

Inspired by his upbringing, Ian wanted to put a fresh spin on this traditional recipe. Marco, whose favorite Peruvian dishes often feature hard-boiled eggs, was equally intrigued. 

Together they crafted K-Mama Braised Egg, a sweet and spicy take on their cultures. Serve it as a side or on rice for a main.
