Looking for a vibrant, flavorful noodle salad that’s easy to prep ahead for lunch? This Gochujang Spicy Sesame Noodle Salad is gluten-free, vegan, and packed with fresh veggies, but you can easily customize it with chicken, eggs, or tofu if you like.
Ingredients for 2-4 servings.
- Rice noodles (follow box instructions)
- Cucumber (1)
- Red bell pepper (1)
- Carrot (1)
- Green Onions for garnish
- K-Mama Gluten Free Spicy (2 tablespoons)
- Salad Girl Toasted Sesame Ginger Dressing
- Adjust the dressing ratio (2:1) to make more or less, depending on your preference.
Instructions:
- Cook the noodles: Bring a pot of water to a boil and cook the rice noodles according to package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
- Prep the veggies: While the noodles are boiling, chop the cucumber, bell pepper, carrot, and green onions.
- Combine salad: In a large bowl, toss together the cooked noodles and chopped vegetables.
- Make the dressing: In a small bowl, mix 4 tablespoons Salad Girl with 2 tablespoons K-Mama Spicy GF Gochujang Sauce. Adjust quantities 2:1 (Salad Girl: K-Mama) if making a larger batch.
- Dress the salad: Pour the dressing over the noodle-vegetable mix and toss until everything is well coated.
- Serve or store: Enjoy immediately, or store in an airtight container in the fridge for up to 3 days. Perfect for meal prep!
Optional add-ins: Grilled chicken, eggs, shrimp, toasted sesame seeds, bok choy.
